Vegan Apple Pie
Apple pie is a classic dessert with delicious apple filling. It is said to be very popular in North America. It is crispy, flaky and delicious with juicy apple filling flavored with cinnamon.
A delicious dessert which can be eaten plain or with a scoop of ice-cream.
RECIPE
Preparation Time: 25 minutes
Cooking Time: 45 minutes
Total time: 1 Hour 10 minutes
INGREDIENTS:
FOR CRUST:
- 1.5 cups all purpose flour
- 1/4 tsp cinnamon powder
- 1/4 tsp salt
- 75 gm unsalted butter, chilled
- 1/2 cup chilled water
- 1-2 tsp sugar (optional)
FOR FILLING:
- 2 apples
- 1 tsp cinnamon powder
- 2 tbsp brown Sugar
- 2 tbsp cornflour
ASSEMBLING:
- Milk as needed
- Brown sugar as needed
- Cinnamon powder as needed
METHOD:
FOR CRUST:
- Pre heat the oven to 180°C. Grease a pie pan with butter. I used the cupcakes mold.
- Sieve the all purpose flour.
- In a bowl, combine all purpose flour, cinnamon powder, salt and sugar.
- Cut the butter into cube and put it in the freezer for half an hour.
- Add the chilled butter to the flour and mix well with fingertips so that they resemble bread crumbs.
- Add cold water to the flour and gather together all the contents to form a dough. Do not knead. I added a little less than 1/2 cup water here.
- Keep covered with wet cloth to avoid drying out.
FOR FILLING:
- Peel, core and thinly slice the apples.
- In a bowl, combine sliced apples, cinnamon powder, brown sugar and cornflour and mix well.
ASSEMBLING:
- Divide the dough into two parts.
- Dust a rolling board with flour. Take one part on the rolling board and flatten with palm.
- Roll it out into a disc of 1/4 inch thickness.
- Place this rolled pie crust on the greased pie pan or cupcakes mold and press gently, lining it with the pan or mold. You can cut off any extra dough.
- Put the apple pieces evenly on the bottom pie crust.
- Take the other portion of the dough and repeat the process again to make another disc.
- The top crust of the pie can be made into two ways. I have noted down both below: Cover the pan with this second pie crust and fold the edges of the top crust over and under the bottom crust or cut strips of the rolled out pie crust and create lattice pie crust. In this recipe, I have made a lattice pie crust.
NOTE: If you are making a normal pie crust, you need to make small cuts through the top pie crust with a knife so as to allow steam to pass while baking. - Brush the top crust with milk and sprinkle brown sugar and cinnamon powder over it.
- Bake it for 45 minutes @ 180°.
- The crust will become golden and crisp.
- Serve it warm, with a scoop of vanilla ice-cream.
