Eggless orange zest cake made from fresh cream/ malaai

Malai cake or cream cake is a soft, spongy and delicious cake made with all purpose flour and cream which we Indians called it as malai. I'm sharing a version of malai cake here.
I will soon share other versions of the cake too. Do try and let me know how it turned out to be.
RECIPE 
Prep time: 15 minutes 
Cook time: 40-45 minutes 
Total time: 1 Hour- 1:05 Hour
Serves: 6-8

INGREDIENTS:
  • 1 cup all purpose flour(maida)
  • 1 cup icing sugar 
  • 1 tsp baking powder 
  • 1/2 tsp baking soda 
  • 1/4 tablespoon cardamom powder 
  • 1/2- 3/4 cup malaai/fresh cream 
  • 1 tsp vanilla extract 
  • 1/2 cup milk
  • 1/2 cup curd
  • 1/2 tsp Orange zest
  • 2 Tbsp Tutti frutti 
  • 7" tin for baking 
METHOD:
  1. Preheat the oven at 180° for 10 minutes. 
  2. Add baking soda in curd. This helps to make the cake light and fluffy.
  3. Wet ingredients: Take malai and icing sugar in a bowl and mix well lightly (else butter would  come out of the malai). Add curd & soda mixture in it and mix it well. Now, add vanilla extract in the mixture.
  4. Dry ingredients: Sieve the  flour, baking powder twice or thrice and keep it aside. 
  5. Combine dry ingredients and wet ingredients together. Add milk in it and stir it in folding method. (Don't overmix it. Mix until there are no lumps of maida in it.)
  6. The mixture should be of pouring consistency. 
  7. Now add orange zest, cardamom powder, tutti frutti and stir it again in folding method. 
  8. Grease the cake mold and sprinkle little maida into it.
  9. Pour the batter into it and garnish it with Tutti frutti. 
  10. Bake it at 180° celsius for 40 minutes. 
  11. Yummy and delicious cake is ready to eat.
