Vegan Banana Fritters
These vegan Banana Fritters have a light and crispy batter for those with a sweet tooth.
I prefer making them for breakfast, as even though they are deep fried, they are still quite healthy.
The perfect treat for Banana Lovers!

INGREDIENTS:
- 2 ripe bananas, mashed
- 1 cup all purpose flour
- 3 tbsp dessicated coconut
- 1/2 tsp cardamom powder
- 3/4 tsp cinnamon powder
- 1 tbsp baking powder
- 1/4 tsp salt
- 4-5 tbsp caster sugar
- 1 tsp vanilla extract
- 1 tbsp butter, melted
- Oil for frying
- Water as required
METHOD:
- Peel the bananas and cut them in to slices. Put them into a blender and mash them.
- In a medium bowl combine together mashed bananas, sugar, flour, coconut powder, cardamom powder, cinnamon powder, baking powder, salt, butter and water. Mix well to the consistency of a creamy batter.
- Add vanilla extract in the batter and let it rest for 5 minutes.
- Banana Fritter batter is ready to fry.
- Heat oil in a pan for deep frying.
- Get some of the batter in the cookiescoop and then scoop it in a oil and fry it on medium low flame till it turns golden brown, about 7-8 minutes. NOTE: Do not overcrowd the pan (it will cause the fritters to be soggy and absorb excess oil)
- Using a slotted spoon, remove the fritters and place them on paper towels.
- Serve hot!
