Rajasthani wheat flour Raab

 Raab is a traditional Rajasthani drink which has been an important part of daily diet of people all over Rajasthan from past many centuries.
It is a healthy and nutritious porridge using whole wheat flour or millet flour. It is usually served along with the meals.
RECIPE
Prep time: 5 minutes
Cook time: 10 minutes
Total time: 15 minutes
Serves: 4-5
INGREDIENTS:
  • 2 cups curd
  • 1 tbsp whole wheat flour 
  • 1 tbsp gram flour/ besan
  • 1/2 tsp salt
  • 1 tsp roasted cumin powder 
  • 1.5 cup water
METHOD:
  1. In a saucepan mix together all the flours. Add curd, water, salt and mix well without any lumps using a balloon whisk or with your finger tips.
  2. Place the saucepan on the stove and cook over medium flame till comes to a boil.
  3. Simmer the flame completely and cook for 5 to 7 mins stirring continuously till the raab thickens considerably.
  4. Stop cooking when it reaches about semi pouring consistency.
  5. Pour it into the serving glass and sprinkle a pinch of roasted cumin powder.
  6. Raab/Raabdi will be thickened further upon cooling.
NOTE: You can serve it hot in winters and chilled in summers.
