Mexican Corn Chaat/ Salaad

Mexican sweet corn chaat is a delectable spiced and tangy snack made with boiled sweet corn, mayonnaise, onion, lemon and spices.
If you're a corn lover, you're  definitely gonna love this dish. It has so much flavor, light, healthy and super easy to make!

RECIPE:

Serves: 2
INGREDIENTS:
BOILING:

  • 1/2 tsp sugar
  • 1 dry red chilli
  • 4- 5 coriander roots
  • 1 inch ginger
  • 1 inch cinnamon stick
  • 1/2 tsp coriander seeds
  • 1/2 tsp black peppercorns 
  • 1/2 tsp salt
  • Water as needed

CHAAT:

  • 1 cup sweet corn kernels, boiled 
  • 1/4 cup onion, chopped 
  • 2 tbsp coriander leaves, chopped 
  • 2 tbsp butter
  • 2 tbsp mayonnaise 
  • 1 lemon 
  • 1/2 tsp red chilli powder 
  • Salt to taste 

METHOD:

  1. Boiling corn: Pressure cook corn kernels with enough salt, sugar, dry red chilli, coriander roots, ginger, cinnamon, coriander seeds, solid black pepper and water for 2 whistles or until well cooked. Once cooled,drain the water completely and now they are ready for chaat preparations.
  2. Melt the butter in a pan over a medium flame. Add the onion and saute for a minute. Now add corn kernels and mix well. Turn off the flame.
  3. Now add mayonnaise, red chilli powder, coriander leaves, salt.
  4. Finally squeeze lemon juice and mix well.
  5. Serve immediately top with little mayonnaise.
  6. Yummy Mexican corn salad is ready to eat.
