INGREDIENTS:
BOILING:
- 1/2 tsp sugar
- 1 dry red chilli
- 4- 5 coriander roots
- 1 inch ginger
- 1 inch cinnamon stick
- 1/2 tsp coriander seeds
- 1/2 tsp black peppercorns
- 1/2 tsp salt
- Water as needed
CHAAT:
- 1 cup sweet corn kernels, boiled
- 1/4 cup onion, chopped
- 2 tbsp coriander leaves, chopped
- 2 tbsp butter
- 2 tbsp mayonnaise
- 1 lemon
- 1/2 tsp red chilli powder
- Salt to taste
METHOD:
- Boiling corn: Pressure cook corn kernels with enough salt, sugar, dry red chilli, coriander roots, ginger, cinnamon, coriander seeds, solid black pepper and water for 2 whistles or until well cooked. Once cooled,drain the water completely and now they are ready for chaat preparations.
- Melt the butter in a pan over a medium flame. Add the onion and saute for a minute. Now add corn kernels and mix well. Turn off the flame.
- Now add mayonnaise, red chilli powder, coriander leaves, salt.
- Finally squeeze lemon juice and mix well.
- Serve immediately top with little mayonnaise.
- Yummy Mexican corn salad is ready to eat.
