Crispy Corn Fries
It is an interesting and popular fried snack recipe made with corn kernels and melange of spices. These are quick, easy to make and more importantly lip-smacking in taste.

Serves: 3-4
INGREDIENTS:
- 2 sweet corn kernels, boiled
- 4 tbsp cornflour
- 4 tbsp riceflour
- 1 tbsp all purpose flour
- Pinch of black pepper
- Salt to taste
- 1 tbsp red chilli powder
- 1 tsp aamchur powder
- 1 tsp garlic powder
- 1 tsp cumin powder, roasted
- 1 tsp chaat masala
- 1/2 tsp black pepper
- 1 tbsp lemon juice
- 1 lemon wedge
- 1 tbsp coriander leaves, chopped
- 2 tbsp onion, chopped
- 1 tbsp water
- Oil for frying
METHOD:
- Measure and cut the corn in 1 centimeter less than the toothpick length.
- Cut the corn into two halves from the middle. Inset toothpick into the corn kernels. Apply pressure sideways to remove the corn kernels.
- Boil for 4-5 minutes and let it cool down.
- In a mixing bowl, combine boiled corn kernels, cornflour, rice flour, all purpose flour, black pepper and salt. Mix and coat well. Add 1 tbsp water and mix again making sure the flour is coated well to corn.
- Refrigerate in freezer for 15 minutes.
- Heat oil in a pan and fry corn kernels on high flame till it turns golden brown and crispy. Tranfer the fried corn kernels in a large bowl and keep it aside.
- Take a small bowl, combine red chilli powder, aamchur powder, garlic powder, cumin powder, chaat masala, black pepper, 1 tsp salt and mix well. Spice mix is ready.
- Now add lemon juice, coriander leaves, onion, mixed spices to fried corn kernels. Mix well combining everything well.
- Garnish with lemon wedge. Crispy corn fries are ready to serve.
- Serve it with tomato ketchup.
