Vegan banana bread
Banana bread is a type of bread made from mashed bananas. It is often a moist, sweet, cake-like quick bread.

INGREDIENTS:
- 2 cups all purpose flour
- 1/2 cup castor sugar
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp cinnamon powder
- 1/2 tsp coffee powder
- 6 tbsp yogurt
- 1 tsp vanilla extract
- 1/2 cup malaai/ fresh cream
- 3 Ripe bananas
- 3 tbsp mixed dryfruits
- 1/3 cup milk
- Preheat the oven at 180 for 10 minutes.
- Add baking soda in curd. This helps to make bread light and fluffy.
- Wet ingredients: Take malai and castor sugar in a bowl and mix well lightly (else butter would come out of the malai). Add 2 mashed bananas in the mixture. Add curd mixture in it and mix well. Now, add vanilla extract in the mixture.
- Dry ingredients: Sieve the flour, baking powder, cinnamon powder, coffee powder, ginger powder, salt twice or thrice and keep it aside.
- Combine dry ingredients and wet ingredients together. Add milk in it and stir it in folding method.
- Add dry fruits in the mixture and mix well. Note: Don't overmix it..Mix until there are no lumps of maida in it.
- Grease the loaf pan and sprinkle little maida into it.
- Pour the batter into it and garnish it with banana slices and mixed dry fruits.
- Bake it at 180 degrees celsius for 45 minutes.
