Sabudana vada with curd dip


Sabudana vada, also called 'sabu vada', is a traditional deep fried snack from Maharashtra, India.
It is crispy and delicious and thus tastes great with coconut chutney, spicy green chutney, curd (yogurt) and can also be served with hot chai and is best eaten fresh.
Easy and super yum!
RECIPE

Serves: 3-4
INGREDIENTS:
  • 1/2 cup sabudana (tapioca pearls)
  • 1 cup potatoes (2 medium sized)
  • ½ cup peanuts
  • 1 tsp cumin seeds 
  • 2 green chillies, finely chopped
  • 1 tsp ginger paste (optional)
  • 1 tsp lemon juice
  • 3 tbsp coriander leaves, chopped
  • 1/2 tsp sugar
  • A pinch of baking soda 
  • Salt to taste
  • 1 cup water (For soaking sabudana)
  • oil for frying
Curd dip
  • 1 cup curd
  • 1 tbsp sugar
  • 1/4 tsp salt
  • 1 small raw mango, peeled and grated
  • A pinch of red chilli powder 
  • 1/4 tsp pudina powder
METHOD:
VADA
  1. Wash the sabudana properly.
  2. Soak the sabudana in water for 8 hours at least. After the sabudana is soaked it will almost double. Drain of all the excess water.
  3. Add the sabudana in a mixing bowl. 
  4. Boil the potatoes. Peel and then mash them. Mix the mashed potatoes and sabudana together.
  5. On a skillet, add little oil and roast the peanuts till they become crisp and crunchy. Cool and then coarsely powder in a dry grinder.
  6. Add the powdered peanuts, salt, cumin seeds, sugar, ginger paste, green chillies, coriander leaves, lemon juice, baking soda to the sabudana. Mix the entire mixture very well.
  7. Take water in a bowl and wet your hands.
  8. Now take some portion of the mixture in hands and shape them into vada or patty.
  9. Do this till all the mixture is utilized.
  10. Heat oil for deep frying in a kadai. Oil should be medium hot. Add a vada made from the mixture.
  11. Fry till they are crisp and golden.
  12. Remove them with a slotted spoon. Place on kitchen paper towels to absorb excess oil.
  13. Crispy sabudana vadas are ready to eat.
  14. Serve it with the curd dip or the dip of your choice.
CURD DIP:
  1. Take the curd and add sugar, salt, grated raw mango, red chilli powder, pudina powder in it.
  2. Mix it very nicely.
  3. Curd dip is ready to serve with sabudana vada.
