Mango Phirni
There's only one reason why I love the great Indian summer: Mangoes!
Phirni is a very popular Indian Dessert and one such delicious sweet pudding which is loved and devoured by anyone.
Mango phirni is a rich dessert made with full cream milk, crushed rice and mango puree. It is a perfect mango delight for our taste buds. It is traditionally serve chilled in individual earthen bowls or mud pots and garnished with nuts.
RECIPE

Serves: 4
INGREDIENTS:
- 1 litre full cream milk
- 4 tbsp basmati rice (50 gms)
- 2 mangoes, pulp
- 1 tbsp cashew paste
- water for soaking
- ¼ cup sugar (100 gms)
- ¼ tsp cardamom powder
- 2 tbsp saffron milk
- few dry fruits, chopped
- Wash and soak basmati rice for half an hour.
- Discard the water.
- In a grinder jar, add soaked rice and 2 tbsp water and grind it into a coarse paste.
- Now, in a large pan boil milk.
- Stir occasionally, and simmer for 10 minutes.
- Keep the flame on low or till milk thickens.
- Now add in prepared coarse rice paste.
- Stir continuously for 5 minutes else, lumps might form.
- Boil the milk till the rice gets cooked completely.
- Add mango pulp and mix well. The phirni will get thicken and mango color will be there.
- Add cardamom powder, cashew paste, sugar and saffron milk and bring it to a boil.
- Mix well till the milk thickens and turn creamy.
- Allow the phirni to cool down completely.
- Serve chilled mango phirni in mud pots garnished with mango and few chopped nuts.
