Mango Glaze Cake
This mango cake is bursting with fresh mango flavor!
An eggless mango cake crumb coated and topped with mango glaze and melted chocolate. This is a perfect way to use seasonal mangoes.

INGREDIENTS:
For Cake
- 1.5 cup mango glaze
- 1.5 cup all purpose flour(maida)
- 3/4 cup caster sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tablespoon cardamom powder
- 1/2- 3/4 cup malaai/fresh cream
- 1 tsp vanilla extract
- 1/2 cup milk
- 1/2 cup curd
- 2 tbsp tutti frutti
- 3 tbsp chocolate, melted
- 2 tbsp almonds for garnishing
- 7" tin for baking
- 1 large mango
- 2 tbsp cornstarch
- 1/4 cup caster sugar
GLAZE RECIPE
- In a saucepan add mango puree, cornstarch and sugar. Mix well and let it cook on simmer until it starts thickening. (Approx. 5 minutes)
- Let it cool in refrigerator to use on the cakes.
- Preheat the oven at 180 for 10 minutes.
- Add baking soda in curd. This helps to make cake light and fluffy.
- Wet ingredients: Take malai and icing sugar in a bowl and mix well lightly (else butter would come out of the malai). Add curd mixture in it and mix well. Now, add vanilla extract, 6 tbsp mango glaze in the mixture.
- Dry ingredients: Sieve the flour, baking powder twice or thrice and keep it aside.
- Combine dry ingredients and wet ingredients together. Add milk in it and stir it in folding method. Note: Don't overmix it. Mix until there are no lumps of maida in it.
- The mixture should be of pouring consistency.
- Now add cardamom powder, tutti frutti and stir it again in folding method.
- Grease the cake mold and sprinkle little maida into it.
- Pour the batter into it and garnish it with Tutti frutti.
- Bake it at 180 degrees celsius for 35- 40 minutes.
- Level one cake and add a generous amount of mango glaze on top of it. Sandwich it with the second layer of cake.
- Add a nice layer of mango glaze on top and decorate with melted chocolate, almonds, silver balls.
- Refrigerate the cake before serving. Slice and serve.
