Mango Chia Pudding
This yummy mango chia pudding can be enjoyed at any time of day, whether as a healthy breakfast option, a midday snack, or as a delightful dessert after dinner.
Chia seeds are an excellent source of omega-3 fatty acids, rich in antioxidants, and they provide fiber, iron, and calcium. Omega-3 fatty acids help raise HDL cholesterol, the “good” cholesterol that protects against heart attack and stroke.

INGREDIENTS:
MANGO CHIA PUDDING:
- 1 cup milk
- 1/4 cup chia seeds
- 2 tbsp honey/maple syrup
- 1 tsp vanilla extract
- 4 tbsp chopped mango
- 1 cup mango puree
- 2 tsp mixed dry fruits, crushed
- Pinch of cardamom powder
- 2 strands of saffron
- 1 large mango
- 1 tbsp honey
MANGO PUREE:
- In a blender, combine mango and honey and blend it.
- Mango puree is ready.
- In a glass jar, combine milk, honey, vanilla extract, 1/2 cup mango puree, cardamom powder and chia seeds. Mix well.
- Rest it for an hour in the refrigerator until it becomes thick.
- In 2 glasses, create layers of chia pudding(1/2 cup each) and mango puree(1/4 cup each) starting with the pudding.
- Garnish it with honey, chopped mango pieces, mixed dry fruits and saffron.
- Yummy mango chia pudding is ready to eat.
