Mango Chia Pudding

This yummy mango chia pudding can be enjoyed at any time of day, whether as a healthy breakfast option, a midday snack, or as a delightful dessert after dinner.
Chia seeds are an excellent source of omega-3 fatty acids, rich in antioxidants, and they provide fiber, iron, and calcium. Omega-3 fatty acids help raise HDL cholesterol, the “good” cholesterol that protects against heart attack and stroke.

INGREDIENTS:
MANGO CHIA PUDDING:
  • 1 cup milk 
  • 1/4 cup chia seeds
  • 2 tbsp honey/maple syrup
  • 1 tsp vanilla extract 
  • 4 tbsp chopped mango
  • 1 cup mango puree
  • 2 tsp mixed dry fruits, crushed
  • Pinch of cardamom powder 
  • 2 strands of saffron 
MANGO PUREE:
  • 1 large mango
  • 1 tbsp honey
METHOD:
MANGO PUREE:
  1. In a blender, combine mango and honey and blend it.
  2. Mango puree is ready.
MANGO CHIA PUDDING:
  1. In a glass jar, combine milk, honey, vanilla extract, 1/2 cup mango puree, cardamom powder and chia seeds. Mix well. 
  2. Rest it for an hour in the refrigerator until it becomes thick.
  3. In 2 glasses, create layers of chia pudding(1/2 cup each) and mango puree(1/4 cup each) starting with the pudding.
  4. Garnish it with honey, chopped mango pieces, mixed dry fruits and saffron.
  5. Yummy mango chia pudding is ready to eat.
