Aam panna/ Tangy mango drink

A perfect summer coolant.
It is an Indian drink renowned for its heat-resistant properties.
It is made from raw mangoes and is yellow to very light green in color, and is consumed as a tasty and healthy beverage to fight against the intense Indian summer heat. .

RECIPE

Cook time: 15 minutes
Total time: 25 minutes
Serves: 6-7 glasses 
INGREDIENTS:
  • 2 raw mangoes
  • 4 tbsp mint leaves/pudina
  • 1/4 cup sugar
  • 2 tbsp lemon juice
  • 1/2 tsp cumin pwoder
  • 1/2 tsp black pepper powder
  • 1/2 tsp common salt
  • 1/2 tsp black salt 
  • Water as required
  • Ice cubes
METHOD:
  1. In a pressure cooker, add the mangoes and water to it.
  2. Cover the lid and pressure cook them for 5-6 whistles. 
  3. Remove the steam and cool down the cooked mangoes completely.
  4. Peel the skin of the mangoes and extract the pulp out of it.
  5. In a mixer/grinder, add the pulp, 3 tbsp mint leaves, sugar, lemon juice.
  6. Blend to smooth paste without adding any water.
  7. Now add cumin powder, black pepper powder, common salt and black salt.
  8. Mix well making sure everything is well combined. Aam panna concentrate is ready.
  9. To serve in a medium glass, take a tbsp of aam panna concentrate and add few ice cubes.
  10. Pour in chilled water and mix well.
  11. Garnish it with fresh mint leaves and serve it with boondi.
