Tutti frutti

Who thought that the rinds of watermelon i.e. the white part in watermelon could turn into a colorful tutti frutti!
Kids love to eat tutti frutti and it can be added to any dish like bun to make it attractive to kids.
We can use them in bakery products, alse used as a topping for ice cream and even paan.
 RECIPE 
INGREDIENTS:
  • 2 cups watermelon's rind (white part of a watermelon)
  • 1 cup sugar
  • 2 cups water
  • 2 drops of each food colour (raspberry red, orange, lemon yellow, green)
  • 2 drops of each essence (rose, orange, lemon/mango, pineapple)
METHOD:
  1. Chop the watermelon rind into cubical pieces after removing red part of watermelon.
  2. Add 1 cup of water and mix 1 cup of sugar in a saucepan. Let it boil for approximately 5-7 minutes.
  3. When sugar syrup starts boiling, you will get a sticky syrup in consistency.
  4. Add chopped watermelon rinds into it and let it boil for 10 minutes.             
  5. All the pieces should get transparent. Look at the texture before switching off the flame.
  6. Take 4 bowls and transfer those pieces in equal proportion in the bowls. 
  7. Add 2 drops of food colour and essence for flavour in each bowl and stir it.                                                    (Raspberry red food colour- rose essence, Orange food colour- orange essence, lemon yellow food colour- lemon/mango essence, green food colour- pineapple  essence)                   
  8. Then keep this for 2-3 hours making sure that the watermelon rinds soak all the colour.
  9. Sieve all the mixtures separately and spread it on a tray. Sundry for a day.
  10. Once the tutti frutti dries off completely, it will not be sticky. 
  11. Mix them together.
  12. Colourful tutti frutti is ready to eat. Store it in a refrigerator.
